10-Minute Air Fryer Salmon | Recipeish | Gustus Vitae

It's 6:45 on a weeknight and nobody has a plan. Good. Grab four salmon fillets, rub them with oil, and coat them properly with Vital Defense Garlic & Onion All Purpose Superfood Seasoning. That's a whole spice rack's worth of real herbs and spices in one shake, landing on a fish that's already one of the best things you can put on a weeknight plate. Ten minutes in the air fryer gets you a crackly, golden crust over a silky center. No marinade, no pan, no plan required. Pair it with whatever's already around: rice, roasted potatoes, a bag of greens, last night's veg. Dinner's a 2-ingredient emergency kit now.

INGREDIENTS

  • 4 salmon fillets, about 6 oz each and roughly 1 inch thick, skin on or off
  • About 2 Tbs olive or avocado oil
  • About 2 1/2 Tbs Vital Defense seasoning
  • Lemon wedges, for the table

DIRECTIONS

  1. Preheat the air fryer to 400F. Pull the salmon out of the fridge and pat it bone dry with paper towels, top, bottom, and sides. Wet fish steams; dry fish browns.
  2. Oil, then season like you mean it. Rub the oil over every surface, then coat the tops and sides with all 2 1/2 Tbs of the seasoning. It looks like too much. It isn't. The salt is already in the blend, so this is your only seasoning step.
  3. Build the crust. Press the seasoning down with your fingertips so it sticks. This is the whole trick: the minced garlic and onion toast, the sesame seeds pop, and the touch of coconut sugar caramelizes against the salmon's own fat into that dark, crackly crust you see in the photo. Seasoning that's just sitting on top blows around the basket; seasoning that's pressed in becomes the crust.
  4. Cook and leave it alone. Fillets in a single layer, skin side down if they have it, with a little space between them. 400F for 8 to 10 minutes. No flipping. Pull it at 125F in the thickest part if you like it silky and just-opaque in the middle, or go to 145F for fully firm and flaky.
  5. Squeeze lemon over the top and eat.

NOTES & VARIATIONS

Thicker or thinner. A center-cut fillet over 1 1/2 inches wants 11 to 13 minutes. Thin tail pieces are done in 6 or 7. Start checking early.

Frozen salmon. No need to thaw: rinse off any ice glaze, pat dry, oil and season, then 12 to 14 minutes at 400F.

Crispy skin. Skin-on fillets, skin side down, and don't touch them. The skin crisps against the basket and slides right off the flesh if you'd rather skip it.

Make it a bowl. Flake it over rice with cucumber, avocado, and a spoon of yogurt or sour cream stirred with a pinch more Vital Defense. The ginger and orange zest in the blend do a lot of work here.

White fish night. Same method on cod, haddock, or pollock: 400F for 8 to 10 minutes, no flipping, done at 145F.

The applications from here are endless: next to roasted broccoli, over a pile of greens, tucked into a tortilla, or alongside whatever starch is already in the cupboard. But make it plain the first time, hot out of the basket with a squeeze of lemon, and notice that dinner took less time than deciding on dinner.
