Spicy Green Coconut-Ginger Mint Soup

Vibrant color, bold flavor, and completely healthy and delicious - what more could you ask for? This green comfort soup is the perfect addition to a delicious fall or winter meal. Possessing all true characteristics of the palate - the sweet and subtle notes of apple, spicy flavors of Gustus Vitae Crushed Red Pepper Flakes, and the refreshing relish of mint and ginger help transform this soup into a gourmet masterpiece. This soup pairs strikingly well with freshly braked bread or roasted chicken or tofu. Sunflower seeds (or another nut alternative) provide the subtle crunch to help savor each and every bite.



  • 1.5 Tsp. Cumin
  • 1 Tsp. Coriander
  • 2 Tsp. Coconut oil
  • 1 Cup Coconut Shavings
  • 3/4 Bunch asparagus, chopped
  • 1/2 Cup fresh mint sprigs
  • 3 Cups chopped celery
  • 1 Large apple, peeled and chopped
  • 3 Tbsp. freshly grated ginger
  • 6 Cups Vegetable stock
  • 3.5 Cups kale
  • 1 Can coconut milk
  • 1 Lime, squeezed
  • Sunflower Seeds
  • Gustus Vitae Crushed Red Pepper Flakes


  1. Add coconut oil to large pot and heat
  2. Add finely chopped asparagus and cook 5-10 minutes
  3. Add celery and apple to the pot and stir for 5 minutes
  4. Stir in ginger, cumin, and coriander
  5. Add vegetable stock and bring to simmer
  6. Add kale, mint, coconut shavings, and coconut milk to pot, stir to mix and bring back to simmer
  7. Add 3 Tbsp. Gustus Vitae Crushed Red Pepper Flakes and lime juice
  8. Puree in small batches or with an immersion blender
  9. Serve in bowl and top with sunflower seeds, fresh mint, and asparagus spears
