Chocolate Fudge Cookie Sandwiches with Coconut Lemongrass Frosting

Who doesn't love cookie sandwiches?! We've taken one of our childhood favorites and given it a sophisticated twist by adding in our Coconut Lemongrass Cane Sugar to both the cookies and the frosting. The result?
Decadence.
Unparalleled, tropical-feeling decadence. We made these a while ago with the kiddos and had a blast - they had fun making the perfect sandwiches, and both them and us get to eat them. Not a bad deal at all.
Ingredients:
For the Cookies
- 2 Cups White flour
- 2 Free range eggs
- 1 1/2 Cups chopped nuts (walnuts or pecans are our favorites)
- 1 Cup (2 sticks) unsalted butter
- 1 Cup cocoa powder
- 1 Cup light brown sugar
- 1 1/2 Tins Coconut Lemongrass Cane Sugar
- 1 Tsp baking soda
- 1 Tsp California Sea Salt
- 12 Oz milk (not dark) chocolate chips
For the Frosting
- 2 Cups confectioners sugar
- 1 Cup (2 sticks) butter
- 1 Tin Coconut Lemongrass Cane Sugar
- 2 Tbs heavy whipping cream
Directions:
First, let's make the cookies!
- Preheat oven to 350F.
- In a large bowl, mix butter and the sugar mixtures. When well combined, add eggs, and again mix until well combined.
- Working slowly, pour in flour, baking soda, salt, and cocoa powder bit by bit. Doing this gradually will avoid lumps.
- When well combined, add in chocolate chips, and continue mixing.
- Drop roughly 1"x1" bits on an ungreased baking sheet, leaving a couple inches between them. You should have around 12 - 16.
- Bake for 12 minutes (slightly more if you're in a high elevation).
- Remove, and allow to cool.
On to the frosting...
- In a large bowl, whisk together butter and sugar. You'll want to do this on low speed so that you don't over mix from them beginning, then gradually increase the speed to high - this should take around 2-3 minutes total.
- Gradually add in cream, mixing as you do so.
- You're looking for a nice, spreadable consistency for your sandwiches - if you feel like you'd like a less firm texture, just add a bit more cream, slowly, so you can see exactly what it's doing.
To combine
- This is great time to get the kiddos involved - it's lots of fun picking the same perfectly sized cookies, spreading just the right amount of frosting, and making the perfect sandwich!
