A perfect end to summer and perfect beginning to fall - this light and refreshing salad is catered as a side to a sandwich or pizza but can be transformed with ease into a main by adding chicken or shrimp. Fall notes of sweet and tart apples compliment avocado and crunchy almonds for a unique, yet simple complexion.   • 2 Cups mixed greens
  • 1/4 Cup cooked quinoa
  • 1/4 Cup almonds
  • 1/3 Cup apple pieces
  • Mandarin oranges
  • 1/2 Avocado, sliced
  • Crushed black pepper
  • Dressing of choice (olive oil and balsamic works great!)

  1. Place mixed greens in bottom of plate
  2. Add quinoa, almonds, apple pieces, oranges, and avocado
  3. Toss
  4. Drizzle with dressing of choice and season with black pepper
